Udon noodle soup

Ingredients
- 180g udon noodles
- 1l water
- 100g pork loin, finely sliced (100g is one medallion)
- 1 leek, finely sliced
- 2 spring onions, finely diced
- 5g dashi or 1 sachet
- 60ml dark soy sauce ideally tamari
- 1 tbsp mirin
