Pitta bread

Ingredients
- 235ml water at blood heat
- 2 tsp dried yeast
- 400g plain flour plus extra for kneading/rolling
- 2 tsp salt
- 2 tsp olive oil
If you want these to puff (ie. for filling) then they are best cooked in the oven. Don't roll them too thin or it won't happen.
Otherwise, if cooking on the hob, I find they work best using a high heat and cooking for 30s on one side, 60s on the other and a final 30s on the first side gives great results.
Either way, try to shake off as much flour from the rolling as you can before cooking them.
