Pasta with soured cream sauce

These quantities are adjusted from the original which did not use nearly enough pasta.
Ingredients
- 300g dried penne or any pasta shapes
- 25g butter
- 150g soured cream
- 1½ tsp smoked paprika
- ⅛ tsp nutmeg, grated
- 30g Parmesan cheese, grated
- 1l water
- 1 tbsp salt
- ¼ tsp black pepper
Method
Bring the water to the boil in a large pan and add the salt and pasta. Return to the boil and cook for 12 minutes or per the instructions on the pasta packet if different. Meanwhile, melt the butter in a medium pan over a low heat. Add the soured cream, paprika, nutmeg and seasoning and stir well. Do not overheat or leave unattended or the sauce will split. Keep stirring.
Time: 15 minutes.
Check the pasta is done to your liking. Stir a couple of tablespoons of the pasta water into the sauce to loosen it then drain the rest of the pasta and add it to the sauce. Stir well to coat all the pasta then divide between serving bowls and top with the parmesan. Serve immediately.
Time: 3 minutes.
I make this with the addition of a couple of slices of pastrami, chopped into short strips. The dish will happily accommodate other similar additions.
