Chilli, coconut, sweet potato & split pea soup
From Super Food in Minutes by Donal Skehan - page 106.

Time: 50 minutes
Follow Donal's recipe but omit the onions (or use a few spring onions in their place), use one quarter of the oil and simmer for 35 minutes instead of his 15.
Ingredients
- 1 tbsp rapeseed oil
- 1 tsp ground coriander
- 1 tsp cumin seeds
- 1 tsp dried chilli flakes
- 600g sweet potatoes, diced peeled
- 250g dried yellow split peas
- 400ml coconut milk
- 1.5l vegetable stock or light chicken stock
