Green beans with coconut
From The Hairy Bikers' Great Curries by Si King & Dave Myers - page 226.
Serves: 4 – 8
Time: 15 minutes
You can get away with fewer beans. Be very careful not to let the coconut burn.
Ingredients
- 400g french beans, halved
- 3 tbsp rapeseed oil
- 1 tsp yellow mustard seeds
- ½ tsp dried chilli flakes
- 2 fresh green chillies, finely diced
- 10 dried curry leaves
- 50g desiccated coconut
- 1 tsp salt plus extra for seasoning
- ¼ tsp ground turmeric
- 1 tsp garam masala
- 200ml coconut milk (optional)
