Spanish beef

Ingredients
- 1 tbsp olive oil
- 500g braising steak, diced
- 1 red pepper, thickly sliced
- 1 garlic clove, finely diced or crushed
- 100g chorizo, thickly sliced
- ½ tsp dried chilli flakes use double if mild (eg. Aleppo)
- ½ tsp ground cumin
- 1 tsp smoked paprika
- 400g tinned chopped tomatoes
- 1 tbsp tomato purée
- 400g tinned mixed beans rinsed and drained
- 200ml water
- ½ tsp salt or to taste
- ¼ tsp black pepper
Method
Pre-heat the oven to 120°C fan. Brown the beef in a couple of batches in the oil in a hot casserole, removing to a plate once done.
Time: 10 minutes.
Turn down the heat to medium and place the pepper, chorizo, garlic and spices in the casserole and fry for 3 minutes or so. Then add the tomato purée, chopped tomatoes, beans and the water. Return the beef to the pan with any juices and season. Bring up to simmering point and pop in the oven for at least 2 hours.
Time: 125 minutes.
