Merguez with sweet potatoes and beans

The recipe in the book includes home-made chermoula which is grand but the main dish is fine with bought chermoula or even without any of it.
Ingredients
- 1 tbsp olive oil or half-and-half olive and rapeseed oil
- 8 merguez sausages or 18 cocktail sausages
- 4 spring onions, sliced
- 600g sweet potatoes, diced peeled
- 2 garlic cloves, crushed
- 2 tsp ground cumin
- 1 tsp ground ginger
- ¼ tsp dried chilli flakes
- 400g tinned cherry tomatoes
- 200ml chicken stock
- 400g tinned cannelini beans or butter beans
- 400g tinned chickpeas
- 1 tsp soft light brown sugar
- ½ tsp salt
Good with bulgur wheat. Allow 50g dried wheat per person.
