Roast potatoes with chilli, mint & preserved lemon

Easy, tasty potato side dish. Great with Greek main dishes.
Ingredients
- 1½ preserved lemons, finely sliced rind only, discard the pulp and seeds
- 1Kg small waxy potatoes, halved or cut to walnut size
- 3 tbsp olive oil
- ½ tsp dried chilli flakes or finely chop 3 Numex Twilight chillies
- 3 garlic cloves, finely diced
- ¼ tsp dried mint or to taste
