Beef rendang with herby rice

Ingredients
- 2 spring onions, sliced
- 2 tbsp root ginger, sliced or equal ginger and galangal
- 3 garlic cloves, sliced
- 1 tsp ground lemongrass or 1 stalk of fresh
- 1 tsp ground turmeric
- 2 tsp dried chilli flakes
- 3 tbsp rapeseed oil 2 for the beef, 1 for the rice
- 1 cinnamon stick
- 10 cardamoms bashed, 6 for the beef, 4 for the rice
- 600g beef braising steak, diced
- 4 dried kaffir lime leaves
- 1 lime zest and juice (save half the juice until the end)
- 400ml coconut milk
- 50g desiccated coconut
- ½ tsp ground cinnamon
- 200g basmati rice or 100g per serving
- 500ml water or 250ml per serving
- 2 tbsp frozen coriander leaf
- ½ tsp salt
