Broad bean and feta frittata

These are slightly adjusted quantities/ingredients which work just as well. Use the old, lightweight non-stick pan.
Ingredients
- 150g frozen broad beans
- 1 tbsp olive oil
- 2 spring onions, sliced
- ⅛ tsp salt
- ¼ tsp black pepper
- 6 eggs, beaten medium is OK, but use the largest of those.
- 100g feta cheese, diced up to 50% more is good too
- ¼ tsp dried mint if you don't have fresh
Boiled potatoes are a nice accompaniment if you don't have crusty bread. Any leftover frittata can be gently warmed in a low oven the next day - don't overdo it, though.
