Noodles with pork and pak choi

This is a variation on Noodles with prawns and pak choi by Nick Nairn from Ready Steady Cook.
Ingredients
- 1 tbsp rapeseed oil
- 2 garlic cloves, finely diced or crushed
- 1 tsp dried chilli flakes
- 15g root ginger, finely diced
- ½ red pepper, sliced
- 1 pak choi, sliced and separated into white and green parts
- 100g pork loin, finely sliced (100g is one medallion)
- 2 tsp dark soy sauce
- 180g udon noodles
- 1 tbsp frozen coriander leaf
- 60g french beans sliced into bite-size lengths
- 1 lime, quartered optional, to serve
Method
Simmer the noodles in unsalted water for 10 minutes or according to the packet instructions. When they have about 6 minutes to go, heat the oil in a work and stir fry the pork strips over a medium-high heat until they have changed colour.
Time: 6 minutes.
Add the garlic, chili, ginger and stir briefly before adding the beans, red pepper and pak choi. Continue to stir-fry for a futher 2-3 minutes.
Time: 4 minutes.
Drain the noodles well. Add them to the wok with the soy, honey and coriander leaf and continue to stir for another 3 minutes. Keep the noodles on the move or they will stick. Serve garnished with lime segments, if desired.
