Manchego and tomato skillet

Time: 25 minutes
Ingredients
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, finely diced
- 3 spring onions, sliced
- 1 tsp smoked paprika
- 400g tinned chopped tomatoes
- 2 tbsp fresh parsley, sliced
- 150g Manchego cheese, sliced you want about 8 triangular slices
- ¼ tsp salt
- ¼ tsp black pepper
Serve with fresh, crusty bread. Alternatively with roast or fried chicken joints.
