Salmon with lentils

Ingredients
- 1 tbsp olive oil
- 2 spring onions, finely sliced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 150ml vegetable stock
- 100g dried green lentils
- 2 salmon fillets skin on
- 75g natural yoghurt
- ½ tsp dried mint
- ¼ tsp black pepper
Method
Wash and drain the lentils. Place them in a saucepan and add plenty of cold water. Bring to the boil. Cover and boil well for 10 minutes.
Time: 15 minutes.
Drain the lentils, dry the saucepan and put it back on a low heat. Add half the olive oil and all of the spring onions. Fry gently for a few minutes until soft. Add the spices and cook for another couple of minutes
Time: 8 minutes.
Add the stock and the lentils. Bring back up to the boil, cover and simmer for at least 30 minutes, stirring occasionally. Meanwhile, heat the remaining oil in a frying pan to a medium heat. Place the salmon skin-down in the pan, grind over some black pepper and fry for about 5 minutes until the skin is crisp. Then reduce the heat to medium-low, turn the fish over and fry for a further 4 minutes or so until done to your liking.
Time: 35 minutes.
Stir the mint and some black pepper into the yoghurt. Serve the salmon skin side up on top of the lentils and accompanied by the yoghurt.
